1/3 cup of lemon juice

1/3 cup of olive oil

½ cup each, chopped fresh basil, mint and chives

3 cups of chopped fresh cucumbers

1 ½ cups fresh corn kernels


  • In a large bowl, whisk together lemon juice, olive oil, and ½ tsp. each of salt & pepper. Stir in herbs, cucumbers, and corn.
  • Cover; chill at least for two hours.
  • You can add red onions, if you want to add additional flavor.
